Summer Menu: Refresh the Mind, Beat the Heat
As summer's elemental fire peaks, our menu prioritizes cooling, nourishing yin, and quenching thirst. Inspired by this seasonal wisdom, we slow-simmer aged duck, cordyceps, and watermelon rind into a deeply hydrating medicinal broth, and reinterpret Su Dongpo's classic Jade Porridge with geoduck, sea urchin, and silken rice broth to aid digestion. The feast also features fragrant lotus-wrapped chicken with hairy fig root, as well as wax gourd and water bamboo at their seasonal peak, inviting you to dispel dampness and savor the freshness of summer in every bite.

Double-Boiled Duck with Cordyceps and Watermelon Rind
Drawn from the Qing dynasty culinary classic Tiaoding Ji, aged duck is slow-simmered with cordyceps to fortify the lungs and kidneys, with cooling watermelon rind soothing the throat in this deeply nourishing and hydrating dish.
